Line a muffin tray with coconut oil or grass fed organic butter. wrap a piece of lean bacon around the rim, to make the sides of the muffin. Crack a large egg into it. Season with salt and pepper. Put in the oven for 15-20 mins or until bacon is crispy and egg is cooked.
Blend: handful baby spinach leaves, 1/4 avocado, handful berries, 1 scoop protein powder*, 1/2 water, 1 scoop Greens powder*
Saute half cup of diced mushrooms in a little coconut oil. Garlic or onion is optional.
Add 1 cup of raw kale (or spinach), with stalks cut out, and cook until wilted (about 4 mins).
Take kale and mushroom out of the pan, spray a little coconut or olive oil, and pour in two eggs (already whisked). Move the pan around until the egg forms a nice pancake in the bottom of the pan. Add the kale and mushroom to one half of the pan, making a nice layer of veg ontop of the egg. Add feta on top too. Wait about 2 mins until the egg is half cooked (only a little bit runny). Then flip the omelette in half so the non-veg side folds ontop of the veg side. Voila. Serve with fresh tomato, leaves, avocado, fermented vegies etc
Why complicate things? This literally takes 4 mins to make and makes you feel light, healthy and satisfied throughout the morning.
Whisk two eggs + extra egg white. Spray a little coconut oil in a hot pan. Scramble egg mixture by ‘folding’ it slowly in the pan. You only need to fold it every minute, just a few times. This will ensure soft scrambled, not overdone ‘cottage cheese’ eggs.
Serve with fresh veg like avo, tomato, leaves and a wedge of lemon.

3 cups almond meal
1 tablespoon ground flaxseed
1/2 teaspoon sea salt
1/2 teaspoon baking soda
3 large eggs
3/4 cup unsweetened almond milk, light coconut milk, or milk
2 tablespoons extra-light olive oil, walnut oil, coconut oil, or butter, melted
Combine dry ingredients. Combine wet ingredients. Add wet ingredients to dry ingredients and use whizz stick or electric beater to mix until smooth and sloppy. Make pancakes using a light spray of coconut oil and serve your pancake with sugar free greek yoghurt and berries.
